Owned and operated by a celebrity chef, Ivan Ramen is a Tokyo-inspired ramen shop with a quirky New York vibe. In designing a new prototype for the fast casual concept, we focused on creating a fun, welcoming, replicable space that feels both familiar and exotic. We did this by highlighting the unique food preparation and beverage options, standardizing processes, optimizing kitchen efficiencies and developing a kit-of-parts that maintains the urban feel in any location. We developed multiple layouts and a variety of different sized restaurants, allowing us to experiment with what felt right for the concept. The 3,000 sf option was selected for further development and the prototype will be applied to the next location to open.
