Hiya Taco, a fast-casual Taco shop, is a departure from traditional taquerias with a fun, inviting, and uniquely Wisconsin modern take on 1970’s style. Toro, Toro, Toro Restaurant Group created the concept as a relatively low capital investment vehicle with strong returns to off-set the remodel and expansion of their full-service Mexican concept, BelAir Cantina. In taking over an existing burger concept, the back-of-house design reimagined the existing infrastructure with flavor and efficiency in mind. By utilizing a new cook-chill-retherm process, the equipment selections maximize food quality and operations. The new method provides guests with fast, cook to order tacos, and delivers a fresher and more vibrant flavor profile than traditional scoop & serve taco concepts.
The customer journey seamlessly accommodates dine-in and take-out guests with the comfortable environment and renovated exterior. Despite opening amid the COVID-19 Pandemic, the new concept still measures up to the Owners’ requirements for success.
