When Anna and Sam Russell, founders of The Buttered Biscuit, set their sights on expanding beyond Northwest Arkansas, they knew they needed more than just additional locations—they needed a strategic transformation. Their vision was clear: refine the brand to its essence, create a seamless guest experience, and optimize back-of-house operations for efficiency and growth. To bring this vision to life, they partnered with us.
We initiated the project with an in-depth customer segmentation study, analyzing existing guest profiles and financial performance to craft a prototype suitable for expansion. The Promenade at Chenal in Little Rock, AR, emerged as the ideal test location, offering an upscale, high-traffic environment. Rather than designing a one-size-fits-all prototype, we developed a flexible design system—allowing each new location to retain The Buttered Biscuit’s charm while adapting to different markets.
The Buttered Biscuit’s signature dishes—fluffy French omelets, scratch-made biscuits, and house-prepared jams—were delicious but labor-intensive. We introduced smart kitchen innovations to streamline operations, including step-up ranges to improve efficiency in egg preparation, tilt skillets with automated stirring for foolproof sausage gravy, and intelligent combi ovens to enhance biscuit baking. These improvements not only reduced preparation time but also ensured greater consistency in every dish served.
In the front of the house, we reimagined the customer journey. A new coffee and breakfast bar created an inviting, communal atmosphere, while an optimized expo kitchen ensured faster service. Zoned seating, with distinct flooring patterns and booth configurations, allowed for dynamic space management, providing a cozy environment during slower periods and ample capacity during peak hours. Warm golden hues elevated the restaurant’s iconic blue-and-white color scheme, while custom illustrations of buttercups and inspirational quotes reinforced The Buttered Biscuit’s mission of inclusivity and hospitality.
The impact of these design innovations was immediate. The new prototype at The Promenade was built to support $45,000 in weekly revenue—but it quickly exceeded expectations, generating $60,000 per week without straining operations. This success has paved the way for additional locations, including a second Little Rock unit in the Heights neighborhood, with future expansion plans already in motion.
By blending brand storytelling with operational efficiency, we helped The Buttered Biscuit redefine what’s possible for a growing restaurant brand. More than just a design partner, we became a strategic ally—helping a beloved breakfast spot rise to the occasion and set the stage for continued success.
